  • 3 Tbsp. confectioners’ sugar
  • 6 cups heavy cream, divided (1440 ml)
  • 16 oz. mascarpone, room temperature (454 g)
  • 48 ladyfingers
  • 2/3 cup vanilla cream or fruit juice (160 ml)
  • 1 (13-oz.) jar strawberry jam (370 g)
  • 3 Tbsp. crushed freeze-dried strawberries

Instructions

  1. In the large bowl of a stand mixer fitted with the whisk attachment, beat confectioners’ sugar and 3 cups of heavy cream on medium-high speed until medium peaks form, about 3 minutes.
  2. Add mascarpone and beat until just combined; the mixture will loosen.
  3. In a shallow dish, combine vanilla cream or fruit juice with the remaining 3 cups of heavy cream.
  4. Dip each ladyfinger into the mixture for about 30 seconds, just until softened.
  5. Line a 13″ x 9″ baking dish with half of the dipped ladyfingers.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Loosen the strawberry jam slightly by stirring, then gently spread over the mascarpone layer.
  8. Repeat layering with the remaining ladyfingers and mascarpone cream.
