  • ½ cup fresh parsley, chopped (optional)

Instructions

  1. In a large saucepan at medium-high heat, add olive oil and onions. Sauté until onions soften and take on a golden colour, about 3–4 minutes.
  2. Add in the mushrooms, garlic, rosemary, thyme, salt, and pepper. Stir occasionally to allow the mushroom juices to release and evaporate, about 5–7 minutes.
  3. Pour in the coconut milk, vegetable broth, and soy sauce.
  4. In a small bowl, mix cornstarch with 2 tablespoons of water and add to the soup. Stir well to combine.
