  • 1/2 tsp Kosher salt
  • 1 cup Granulated sugar, divided (200 g)
  • 4 cups Whole milk (945 mL)
  • 4 Tbsp Unsalted butter, cubed and at room temp (1/2 stick)
  • 4 tsp Pure vanilla extract
  • 2 cups Heavy cream (475 mL)
  • 3 cups Whole milk (710 mL)
  • 3 large eggs, beaten
  • 2 cups All-purpose flour (240 g)
  • 4 Tbsp Unsalted butter, melted
  • 1 tsp Softened butter, for pan
  • 1 tsp Kosher salt
  • 1 tsp Pure vanilla extract
  • 3/4 tsp Baking powder
  • 1 cup Cold heavy cream
  • 3 Tbsp Confectioners’ sugar
  • 1 tsp Pure vanilla extract
  • 1 pint Fresh blackberries
  • 1 pint Fresh blueberries
  • 1 pint Fresh raspberries

Instructions

  1. In a large bowl, whisk egg yolks, cornstarch, salt, and 1/2 cup sugar until combined.
  2. In a medium pot over medium heat, heat milk with remaining 1/2 cup sugar, stirring until sugar dissolves and milk is steaming.
  3. Slowly whisk half of the hot milk into the egg mixture.
  4. Return everything to the pot and cook over medium heat, stirring constantly, until thick like pudding.
  5. Cook 1 minute longer, then remove from heat and stir in butter and vanilla.
  6. Pour pastry cream onto a baking sheet, cover with plastic wrap directly on surface, and chill until cold.
  7. Whip heavy cream to stiff peaks. Fold into chilled pastry cream until smooth. Keep refrigerated.
  8. Blend crepe ingredients in a blender until smooth. Chill batter at least 1 hour.
  9. Heat softened butter in skillet over medium heat. Pour 1/3 cup batter and swirl to a 9″ circle.
  10. Cook 1–2 minutes until golden. Flip and cook 1 minute more. Repeat for 18–20 crepes. Cool on parchment.
  11. To assemble, layer a crepe on a platter and spread 1/2 cup pastry cream over it.
  12. Repeat layering with remaining crepes and cream.
  13. Cover and chill cake at least 4 hours or overnight.
  14. Whip cream with confectioners’ sugar and vanilla to stiff peaks. Spread over the top.
